Venison & Sausage (pics)

My son killed 4 deer this year. He could have killed more, but he let most of the does walk waiting on his "wall hanger". Anyway he loves for me to cook the backstraps and loin. I remove the silver skin and rub them with Red Eye Express and wrap them in bacon. 

I don't care for venison, but my son and daughter will fight over it. I decided to cook some sausage for me at the same time. These are just the plain old Roger Wood Lumberjack Smoked Sausage. I love those things. 

This was a very simple cook and nothing glamorous, but I feel like I should post more cooks so here you go.

  • Try it over really high heat without the bacon and heavyhanded on the rub. Cook rare and you will think its a steak.

    I think I am going to let them have it Shane. It just isn't my thing. They love it just like this and when I mentioned that I wasn't going to wrap it in bacon you would have thought I was going to serve them Tofu!

  • I understand that. I like cooking it with fajita seasoning and slice thin for tacos/fajitas. I know everything is better in bacon but even I get tired of every thing I cook tasting like bacon. Do you like lamb?

    It is okay. My son loves it! He likes pretty much anything that I egg. Do you cook a lot of it?

  • Not really. I did a leg not too long ago. It reminded me a lot of venison. Thats why I asked.

    For the record, those wall hangers don't taste any better than those does!! Tell him to open fire!! Again the grub looks excellent.

    Thanks @SGH. I have tried to tell him, but he was obsessed with getting a buck. He finally got his wish. He got a 4 point one day and got a 9 point the next. He still wants to get a bigger one.

    I'm in your camp on the venison unless it's jerky. Glad to see you post a cook though.

    Thanks Jason. Most of my cooks are super boring. I can't hang with all of these rock stars here. I am not very adventurous.

    The way I see it, John, there are so many new folks coming in lately there's always someone who can learn from the most basic to the most outgoing cooks. 

    That at being said, I post maybe a third of what I cook, so I'm a hypocrite.
