This is becoming one of our favorites. Spicy "Thai-like" coconut shrimp soup. Joint effort between me and Mrs. Yolk tonight. I did the prep, she cooked.
She told the oldest, "Daddy's putting my soup on the forum." He replied, "So, I've already been on the forum." Teenagers....
i guess it's a badge of honor here.

@Mattman3969 certainly. Very simple
1/2 yellow onion chopped
1/2 red bell pepper chopped
1/2 Orange bell pepper chopped
2 whole jalapeños chopped (we like the heat so chop whole)
3 cloves garlic
1 can diced tomatoes
juice of one lime
1 can Thai coconut milk
1/4 cup fresh cilantro (we were out, used 1tbsp dried)
1lb shrimp med size peeled and veined
sauté onion, peppers in coconut oil till soft or preferred texture. Move aside and bloom garlic and cilantro. Add tomatoes and shrimp cook till shrimp almost done, add coconut milk and simmer until flavors blend. Not long. 10 min?
After plated, add chunked avocado and lime juice. Garnish as desired with cilantro. I used parsley In a pinch.

@riverdoc it is really good.
@Ozzie_Isaac haven't done it over rice, trying to watch the carbs as bikini season is approaching. Would also rock with some crusty hot bread.
@Walt2015 I'd be interested in that recipe as well. If you're not gonna post, feel free to throw it up here! -
