it was +3 today up here in the North. I wanted to do a summer cook to get me out of the winter funk. I cooked up some carne asada and fresh pico.

Looks awesome! Love the matinade. We did carne asada tonight as well. One of my faves. One quick note, if you slice it against the grain, the bite will be much more tender. Skirt/flank like you used can be pretty chewy when slices with.

Recipe would be great! I want to do a variety taco night. Steak, chicken, shrimp, fish. Something for everyone. Just haven't figured out the logistics or recipes yet!Large BGE - 2014

Mojo:
4 garlic cloves, minced
1 jalapeno, minced
1 large handful fresh cilantro leaves, finely chopped
1/2 tsp Kosher salt
1/2 tsp freshly ground black pepper
1/2 tsp cumin
2 limes, juiced
1 orange, juiced
2 tablespoons white vinegar
1/2 cup olive oilPico De Gallo:
4 vine-ripe tomatoes, chopped
1/2 medium red onion, chopped
2 green onions, white and green parts, sliced
1 Serrano chile, minced
1 handful fresh cilantro leaves, chopped
3 garlic cloves, minced
1 lime, juiced
1/4 cup extra-virgin olive oil
1 teaspoon kosher saltI like this to sit in the fridge for at least 4 hours as it gives everything a chance to blend

If you want a little more citrus flavour you can double the recipe for more impact
