    Hey guys. My original rib cook was supposed to be last Sunday, but at the last minute my wife had other ideas so we had to go out of town. 

    I am going to cook three slabs of baby backs tomorrow. I have had two larges for over two years, and I have never cooked ribs!!!! 

    So I will be in virgin territory on Sunday, but I am going to do my best, and I of course will document it with pics the entire way through. 

    I would have cooked them today, but I was held hostage all day long on a shopping trip with my wife, and we just got home. (I am seriously considering taking up drinking again). 

    Wish me luck!

    Finally found a new butcher shop close by.  The old one, Snyders, was a bit pricey but they had fantastic selection and help; went out of business a couple years ago.  There's another one close by but they're only open Tue-Thur and close at 3:00, useless to me.
    The new place closes at 4:00, but are at least open on Saturdays.  May have to hit them up for a brisket this coming Friday.

    Internet is painfully slow. Logged in to my router to see what's up. I've been traveling for work for the past week and my work laptop missed backups while I was gone. Turns out it's backing up now and saturating my pipe.

    @DMW - 1st world problems are the best!

    I have a prime brisket in the SV, made two containers of ABTs with a special "coriander chutney" phil cream cheese, garlic, habanero cheese filling, home made bread fermenting, and salad in fridge, friends bringing by stuff.  We're going to the last day of Jazz Fest and having a big feast at the house with friends to close it out. Have a friend tending the low n slow while I'm there.

    Sitting at sons double header today, getting ready to take my daughter to cheer later.

    Hopefully will have time to mow too.

    Wax seal went bad on a toilet.  Will have to get that fixed sometime too.  Wife is kind of happy though.  She just locked the door and had 1 less bathroom to clean.

    Was sitting outside watching #88 finally win again, and at Talladega!

    I had just pulled a couple picnics off that I cooked for my neighbors. They just had their 4th child on Tuesday and wanted some pulled pork to eat and freeze. Last time I went to Restaurant Depot he came with me and picked these up for $1.09/lb. I tossed them on last night after yesterday's cook.

    And here's the results of that:




    And now I was just sitting out here enjoying the fact I can fit 2 cans of beer with room for head in my 30oz Yeti:


    When suddenly my nasal passages are offended by a nasty stench I hadn't smelled in quite some time. 

    And what do you know other neighbor has a chimney of charcoal sitting on the cooking grid of his cheap offset smoker he never uses with flames leaping from the top. Yep, he doused the briquettes with lighter fluid in a chimney and struck a match.

    I was considering heading over and offering unsolicited advice, but decided with my current state, I'd better just stay home instead of coming across a bit pompous...
