My butcher is looking at bring in pork from a local farm. Birkshire hogs that have been pasture raised with no growth chemicals. After he told me about how they were raised, Green Acres came to mind. He knows I like monster chops (1.5 inches thick), so he gave me one from his test animal to cook up and report back what we think. Oh damn, there goes some more of my money if he starts carrying them ... noticeably better than the standard fare.
Here's what it looked like just before going under the knife.

@Ozzie_Isaac ... yep, Walmart ... East Peoria ... the grave shift butcher ... got to catch him after a few drinks and before a lot of drinks ... about 3:30 am seems about right.
@Tbent ... it's the Lindy's Downtown Market ... I think Jim is more into this exercise than Bob, but either one gets a sparkle in their eye when talking about it.

@bgebrent Salmon is a very fatty fish. As such, it is very forgiving towards overcooking, which is something I see often posted.
Also, the fish flesh is tapered, so the thin section near the tail will be cooked more than the thick frontal section. Enter sous vide.
All that said, I coated salmon (on sale at Rousses @ $3.99/lb) with olive oil, salt and pepper. Bagged it, threw it in the sous vide bath for 40 minutes at 123F. Pulled it out, had some hash browns on the griddle (blackstone muthafkas) and seared it for less than a minute a side.
Served with capers, fresh lemon, and some emulsified sauce....you don't know what you're missing unless you have some.

I'm like a kid on christmas eve. Can't wait to hook it up and get playing with it.
I'm afraid this will start the spending crunch as I will want to replace my rear surround speakers and upgrade certain pieces, and possibly move to a 7.2 setup.
The one thing I will definitely have to do is look into the Oppo players or something equivalent. I have a Sony SACD player hooked up to my Yamaha and none of the new receivers offer analog inputs. I love my SACD collection and the sound it provides so this is a must to keep in the setup. Time to start that research.........Steve

I'm also the proud owner of the Oppo -103, and former owner of the Oppo -83. I can highly recommend both the company and their hardware.
