    @Lit did you liquidate all BGE assets for that Weber addition?  

    Care to share the reason why?

    I know the Weber is pretty nice but not sure if many specifics.

    I got rid of the XL egg and the blackstone griddle so far. I’ve really wanted the Weber if you see one in person you’ll know why it’s built like a tank. It also has push button start and the ash pan like kettles so no more scraping ashes. Also no more warranty claims for cracked ceramics.

    @bgebrent- I'm good with coffee based rubs as I frequently use one from Zingerman'a Deli in Ann Arbor.  I sent a bottle to @thetrim as part of his friggin victory package.

    Just cut apart the beef plate ribs into individual ribs and trimmed the silver skin and some of the fat and hit them with some flaked salt to rest over night. Haven’t done these before so I’m hoping I’m not butchering it. Guessing I just take these up to the 200-205 range? I claimed my rib already.

    @Lit - your temperature range is in the ball-park but trust the toothpick for the win.  It's all about the feel as it is wilh all L&S cooks.

  • Getting pissed at this 6lb pork butt that’s been on the egg for 10 hours at 250 and still isn’t done. I’m never buying smaller weight briskets or butts again. They always take 40% longer than they should
