Did a spatch tonight. Couple spices, indirect on the woo, 325 to 375 for a couple hours. It ended up being on longer than I anticipated but my wife bailed on me to hang out with someone cooler so I had to bath the baby and put him to bed. It still came out nice and crispy which I like. The two spices were a great balance of sweet and spicy.
