I'm gonna have a great weekend! Started with a trip to the slaughterhouse yesterday. Picked up a 12# packer, a 9# butt and 2 1.5" filets.
Last night smoked 6# of bacon to be sliced later today. Sneak preview for breakfast and it's my best batch yet. Didn't soak as long and added maple to one batch. That one is money.
Next up, cut 4 steaks off the butt to be Tasso Ham tomorrow. The rest is cubed and ready to become American style breakfast sausage this afternoon.
The filets are in the marinade of Monterey steak and wooster for the day. Tonight they will be super.
I cut part of the flat off the brisket and it's cubed to be ground into ground beef for later use. The rest of it will go in the egg overnight for lunch on Sunday.
Oh, and as a bonus, finally found that tri tip for next week some time!
Whew, what a weekend of cooking!

@Jeremiah ... hmm ... it's about a nine hour trip for me to "Jason's egg." We could have a mini-fest with all the meat in the fridge. Help the family avoid that dreaded "beef overload." It'd be a humanitarian mission.

All in there's probably 50+ pounds in the fridge. Bring it on. We'll have to defrost the pork rack, loin and other belly, but that's ok.on a side note, I really need another fridge.

See, that's the problem with an egg. You need "next to the egg" storage for the grilling equipment. Then you need another fridge for the "will cook it soon" protein and the BBQ sauces that you're trying out. Extra cabinetry for the rubs and spices that you've "just had to try." Then a freezer for the "to cheap not to buy" protein. A storage rack for your stash of lump that you bought "just in case" the local dealer runs out. Sausage is ground and packed. 4 packs for the guys at work .5# each. Two 1# packs for home, one 1# pack for the in-laws. simple: pork butt, 38g salt, 1 tbs sage, 1 tbs black pepper and 1 tsp red pepper flakes. Could use more red pepper...

Bacon all sliced and packaged. Excuse the poor presentation as I ran out of food saver bags. again 4 .5# bags for the jack legs at work and 3 1# bags for home use.

Filets with brussel sprouts and sauteed shrooms.Sprouts: Cut in half, Boiled for about 1 min then into the cast iron with EVOO, dried cherries and bacon trimmings. On the egg @ 400 for 30 mine stirred halfway thru.Filets seared on cast iron for 2 min per side then 2 min per side at 500. Nice and red and warm. PERFECT.Got the iron nice and hot.
