Porterhouses and brussel sprouts
Harris Teeter had porterhouse steaks on sale, so I snagged some along with some brussel sprouts.
Steaks were dry brined for around a day. Removed from fridge to get to room temp. More salt and pepper and cooked around 600° until 130° for me and 145° for the wife.
Sprouts were seasoned first with EVOO,salt,pepper,and garlic. Heated CI up on egg with butter and canola. Dropped sprouts when heated and cooked till tender. Then, had a mixture of balsamic vinegar and honey that I tossed them in, then back in the skillet. Oh, all little butter too.

Great pics! Did you just put the steaks on, or go TRex? Also - is the skillet a Lodge? I'm thinking of buzzing the handle off of one of mine... We were in T-ville Friday for my buddy to pick up his new Liquorcycle. I waved at you as we drove by.

We were in T-ville Friday for my buddy to pick up his new Liquorcycle. I waved at you as we drove by.
CI pan is a pretty 1960 Wagner handed down to me from my mother. I do have a set of Lodges too, but I love cooking on the older pan.
Not a lot in Tville, lol... I think I saw you, lol. I didn't know anyone sold liquorcycles around here.------------------------------

I had a large bowl with the balsamic, honey, and butter sitting next to the egg. As soon as they were tender, I tossed into the bowl to toss (like doing chicken wings), then I put them right back in the skillet. Took that back into the house till the steaks were done.------------------------------

Dry steaks well before with paper towels. I use a drying rack to raise steaks off a plate. Place on rack and sprinkle with kosher salt. Place in fridge for 24hours. This pulls most of the moisture out of the steak.
Then just a bit more salt and pepper to hit the grill.
