Giant Ribeyes Reverse Seared..
Got some giant ribeyes from the whole foods hippie market and decided to try my first reverse sear. Results were spectacular, I couldnt have been more pleased. I used my new digiq for the first time and set the grill temp to 205 and it held perfectly. I cooked them low and slow to an internal temp of 105 then tented them in foil while I heated the Himalayan salt blocks to 575 and seared them for about a minute maybe 1.5 minutes at the longest. I also made spinach madeline and tried hasselback potatoes for the first time.

BBQ is a celebration of culture in America. It is the closest thing we have to the wines and cheeses of Europe.
Drive a few hundred miles in any direction, and the experience changes dramatically.

Nice cook. How long did it take to heat up the salt blocks? I've never cooked with them.Cooking on an XL and Medium in Bethesda, MD.

I put them in on the lower grate while the steaks weer coming up to temperature. Then When I foiled the steaks I pulled the DigiQ blower and took off DW and let the egg rip. Im going to say it took a scotch and a half?(10-15min) I will time next time I use them.
