A Lil Stuffin and a Lil Wrapping

Last cook before vaca is done. But does that really mean much because we we cook most nights anyways?
Did some stuffed chicken breast and Brussels Sprouts Gratin
Started with 3 boneless breast that were butterflied and beat very thin. Put a layer of Swiss cheese,spinach and sautéed onions,garlic and red peppers Wrapped in bacon and in the freezer quick set Got the small going 425 indirect with some peach and just let the rolls soak up some goodness. Meanwhile I started the sauce for the Brussels Sprouts,butter,shallots,flour,milk with Parmesan and Swiss Cheese and fresh thyme. Once the sprouts were roasted I poured the sauce on and back into the box that makes thing hot for 15mins. And they are done Started basting the chicken with a Peach/jalepono glaze till done. And done And of course a plated and sliced pic

While the food does look outstanding, the use of bacon alone more than earns:

Damn, was looking for the BBQ section and stumbled into the gourmet department. Hmmm. Looks good ... too good ... just doesn't go with my bib overalls. Thanks for the post. Your food and pics are always worth the time to check out.

Thanks for compliments guys. The sauce just added another layer to the sprouts and sometimes you need that with sprouts. The glaze was exceptional on the bacon.
