Boneless Chuck Short Ribs
I purchased a boneless chuck short rib chunk of meat (7lbs) from Costco. Should I cut this up and grill it as steaks or smoke it low and slow, like I would with ribs?

I've never done a boneless one, but I don't see why it would be much different from ones with bones. Don't cut it up - leave it a whole slab o'beef. This is what I did for some chuck ribs with bones (they happened to be Plate RIbs, but they cook pretty much the same way as Chuck RIbs):jkrupp said:I purchased a boneless chuck short rib chunk of meat (7lbs) from Costco.
