Beef ribs today

Trying to make some beef short ribs today.
Egg at 250 indirect. Hickory for wood smoke. Salt and peppered the ribs. Plan to cook for ~1-2 hours into the bone pull back some. Then I will put on the Dutch over with onions, Celery, garlic and carrots. Some red wine and beef stock to cover the ribs. Then let go for another 2 hours in the egg until the beef if tender. Sort of like Griffins recipe.

Would a quick reverse sear help for some char before they hit the dutch oven?

That might help too. Got to figure that out as I don't want the egg too hot when the DO goes on.

So far so good. Prepped the veggies and sautéed in the do on the stove. Reduced the wine and broth a little. Amazing aroma.
Removed the ribs and the indirect rig. Put in the spider with the CI grate. Gave the ribs a quick sear.
Put the indirect rig back on the egg with the DO. Put the ribs in the DO with the broth and veggies meat side down to fit them all in the DO.
I am guessing 2 more hours.

For the win. These came out great. Total cool was 45 minutes to get the egg up to 225-250 and stable. 2 hours of smoking. 4.5 hours braising with no lid on the DO. Did not loose much liquid at all.
Took the carrots, onions and celery and some juice and blended it for a sauce.we served it over some egg noodles.
Awesome. Just simply awesome.

I like it. My wife would kill me if any if her Le Crueset made it into the egg. Looks good and embarrassed to say I have never cooked short ribs.Columbia, SC --- LBGE 2011 -- MINI BGE 2013
