Hasselback back ribs and hasselback potatoes

The usual bb ribs and cole slaw, first time doing hasselback potatoes roasted in duck fat.  After an hour+ in oven at 425F the potatoes was still hard, had to nuke them 3 minutes and back in oven to finish, should have listened to swmbo and parboil or prenuke. These are Ontario pork, good flavour but hardly any meat on them.
