Saturday Seafood Gumbo...
Wanted to try something I haven't made before... So I am going to attempt a simple seafood gumbo recipe later using shrimp, crab meat, and oysters. I know my wife won't eat it; but I'm pretty sure my daughter will try it. This one is OT because I'm going to make this first one on the stove, and it's a pretty expensive cook to mess up on the first go...

Sounds like a great change of pace.... I had a seafood boil on Christmas Eve which was awesome.

Just returned from New Orleans where we had gumbo three times in three days. The best was some my sister-in-law made. And we brought some home and ate it already. Good stuff, but there are a million recipes for it - all of them "perfect" to someone. You will be doing it again soon, I'm sure. Thanks guys for the confidence... Just as the rice was finishing up to serve the gumbo on; our neighbors from across the street, the guy that just got the Large about a month ago, stopped over to introduce us to their latest addition, little Bodie, born a few weeks ago...
Had a great little visit with them, and they were nice enough to try my gumbo. They said it was on point, so I'll take that as it was good.
Elise liked it as did I... The new DO really made nailing the roux fairly easily...
