9.5# rib roast. Removed bones, tied into a round roll as best I could. 5.25# after trimming. Kosher salted, uncovered in refrigerator for 24 hours. Removed & seasoned. Back to refrigerator for 4 hours. Indirect @ 265ish for about 3 hours. Reverse seared @ 450° for 3 minutes. imageimageimageimageimageimage
