Nothing special-but not bad

My buddies from lake charles brought me a bunch of boudin when they came up to hunt. Its from a little place called sonniers. Damn good stuff. I cant get enough. This is chicken boudin. I just smoked it indirect for bout half hour. Casing gets a little crisp but inside is nice and moist.

worst sausage I ever had was served by Dickey's BBQ. it was all dried out, like over-cooked chicken breast. I've grilled pre-cooked sausage, I've grilled sausage after par-boiling raw sausage, and I've microwaved fully cooked sausage and I've never had it come out as dry as what Dickey's BBQ served me.

I've got some that is already smoked and you just have to grill it a little to warm up. The rest has to be fully cooked so I like to smoke it about 350. The chicken kind can get a little dry but the pork stays moist. Its some really good stuff. And from what I understand its basically a gas station on the side of the highway.

@theyolksonyou -- Sorry buddy but boudin only looks like sausage. It's nothing like sausage you're probably used to eating.
It's basically Cajun rice dressing stuffed in sausage casing.
Most Cajuns slow boil it in water. It's difficult to grill without splitting it. You have to geaux real low and slow on the grill. It's hard to slice into sections like you do with sausage. It falls apart, if not careful.

The stuff in the stores( usually zumbos brand) is a poor representation of boudin.

I have never tried boudin, but I have always wanted to. I have family in Lake Charles, Baton Rouge, and New Orleans. I need to get hooked up!

I know you can from lake charles. Theres another place down there that has all kinds of different stuff. They even ship stuff to you. I'll try and remember the name. They have deboned chickens stuffed with crab dressing or stuffed with shrimp etouffee.

You dont have to do that man. You're too kind. Our last chance at a buck deer for jaden is a three day hunt after christmas. After that I'm shipping you my two knives I asked you about. I finally got back a deer from two years ago that I had mounted. Took forever but he's pretty.
