  • The great thing about SV is you could Debone and cube them before the bath. That way each cube is perfect edge to edge.

    Flash fry them and every bite will be pink wall to wall inside and crispy on the outside

    You could have a few rubs and a few finishing sauces out. People could customize every bite.

    Seems like a solid plan.  Could do them in batches too. 

    Bringing my WSM and Digi along with the bros.  Loading it up with 3 racks of slow smoked and finished hot wings, then sauce and into the crock to hold.  One cook that can easily be timed close to serve.  Then start on the short ribs when the grazing begins.
