SWMBO has been working hard this week so I asked her if she wanted to go out for dinner or do some steaks at home. At home was the response. Fired up both large and small eggs. Temps this week end have dropped below freezing so it is fun to have smoke drifting through the neighbourhood. Did the spuds at 400* direct and turned a few times. Brought them up to an IT of 208. Then pulled them and let them cool a bit before scooping out the meat and mixing with Boursin cheese with chopped green onions and garlic, and S&P.
grilled the steaks to a medium rare. SWMBO enjoyed it, so that makes me happy.

@smokesniffer- The grub looks wonderful. We did some stuffed potatoes today as well. Used shredded bacon, cheddar cheese and very finely chopped parsley and onion. Turned out pretty good I thought. I cooked them on the offset and they picked up quite a bit of smoke which I enjoyed. Again your grub looks awesome.
Location- Just "this side" of Biloxi, Ms.

The greatest barrier against all wisdom, the stronghold against knowledge itself, is the single thought, in ones mind, that they already have it all figured out. -
