Mini Max had a little lamb...

Last night's dinner was topped w fresh pesto, scalloped potatoes and charred tomatoes all off of thew Mini Max. I seasoned the chops with some EVOO, salt, pepper and some fresh rosemary. The yukon golden potatoes were topped with a blend of cheddar cheeses and baked at 400F for approx 30 minutes indirect with the plate setter legs up. The chops were seared at 600F direct for approx 3 minutes on each side. The cherry tomatoes were simple: evoo, a little onion salt and pepper and grilled in a basket.

Man, that looks good. Nice work, Craig.Seems like that MiniMax is only really suitable for direct cooking. Can you really put any kind of heat diffuser in there?1 LBGE in Chapel Hill, NC

Damb....love me some lamb. But the Missus doesn't. That looks very, very tasty. Nicely executed! When I'm not Eggin', I'm scootin' Eggin' and 'cueing from Temecula Ca; an hour from San Diego, an hour and five minutes from Palm Springs, and an hour and a half from Los Angeles (yeah, right. With THAT traffic?)
