Man this was fantastic...somewhat a labor of love, but worth it.
Grilled chicken drumsticks raided direct
Removed and set aside chicken
In a large cast iron oven safe pot, sauté bacon until rendered. Some bacon is good, so the full pack must be better, right?
Add chopped celery, onion and carrots and Sauted until onions are translucent
Add 1 cup Burgundy wine and half cup tomato paste, cook about 3 minutes
Add three more cups wine, boil until reduced by half
Put chicken in pot, add 1 quart chicken broth, rosemary and thyme. Bring to boil, cover, and put in 350 degree preheated oven.
Here is how it looks after 90 minutes:
In separate pan, sauté mushrooms until brown, about 8 minutes
Remove chicken, put in pot with mushrooms and keep warm. Simmer sauce 15-20 minutes until reduced by half.
Put mushrooms and chicken back in pot with reduced sauce, stir.
Serve. Don't make the mistake I did and forget French bread! No idea why I played this instead of putting in bowl.

@henapple It simmers in the wine and broth so it wouldn't be crisp when served, but I did crisp it up more than the photo shows.LBGE & SBGE. Central Texas.
