Bison Burgers

Found a good deal on ground Bison meat at our local Fresh Thyme and thought I would give it a try. At first impression it looked lean, fresh and bright. I formed them into patties, dipped in an egg wash and seasoned with a mixture of salt and pepper.
I heated the egg to 700 degrees with the cast iron pan. Put them on for a 30 second sear on each side and lowered the heat to 400 to cook. It took about 3-4 minutes per side and they were medium well, next time I would do about 2 minutes less per side. Finished with a slice of cabot white sharp cheddar and a Turano brioche. Turned out great and will be doing these again.

I only had bison once. I was working in Auroa CO. in 98 and went to a Wlid Bill tourist attraction and they served them. I remember it being excellent my friend.Location- Just "this side" of Biloxi, Ms.

I bet that was fresh! It's pretty popular with the whole gluten free and paleo crowd, but I think it just tastes a little cleaner than beef when making burgers. Might try to mix in a bit of beef next time to give it more fat. Bison is a very lean meat.

That looks great. I love bison and its only dry if you over cook it. I get the packs from Costco and cook to around 140 and they are great. There is a restaurant here Teds Montana grill and their buffalo burgers are so juicy they are hard to eat because the buns get soggy.

They sell bison at Costco for a pretty reasonable price but I didn't really want to buy 15 pounds of it without ever trying it.1 large BGE, Spartanburg SC
