Whole Red Snapper

On my weekly Publix run this morning I noticed a couple of whole red snapper in the fish case. They were in great condition, clear eyes, clean smell, so I jumped all over a 3.5 pounder.

Made a mixture of salt, pepper, parsley, garlic, ginger, lemon juice, and olive oil that I stuffed in the slits that I cut on each side. Stuffed cavity with lemon and parsley.

Grilled at 425 direct about 10 minutes per side.
