Nothing special. Just a 8 pound pork shoulder for pulled sandwichs later.
Smoker- Large BGE
Lump- Rockwood
Seasoning- Salt, pepper, cayenne and more cayenne.
Temperature- 475 degrees. Going hot and fast today.
Set up- Indirect with plate setter and 16 inch drip pan.

Status- Standing by.
