Seasoning- Salt, pepper, cayenne and more cayenne.
Temperature- 475 degrees. Going hot and fast today.
Set up- Indirect with plate setter and 16 inch drip pan.

Oh, I am sure it is great. I was thinking along the lines of going hot and sweet with a mix of cayenne and brown sugar with a rub.------------------------------

It goes very well with brown sugar. When I'm in the mood for a spicy, sweet ham its some of the ingriedants that I use. Works very well.

Panned at 120 internal. I usually wait and pan when the internal is 160. But since I'm running 475-500 degrees I went ahead and panned to test a hypothesis.

Turned out pretty good to be cooked at near 500 degrees. Total cook time from take off to touch down: 2 hours 51 minutes and 17 seconds.

Brother tar it was spot on. I have no complaints. I'm going to try and replicate the results again and if I can, then I will give farther details on how to pull it off. I want to be sure that it wasn't sheer luck my friend.

What are you trying to test?

Trying to get it down where I can run them around 500 degrees with consistent results. I left a few steps out in case it bombed. Going to run another one tomorrow. If it comes out good as well I will post exactly how I did it. Today's could have been sheer luck.

I think the test was he decided to post a below average looking pork butt with little to no bark to see if his herd would still run their fingers through his hair. He succeeded and now he will document the process that isn't in the same ballpark as Mikey's turbo butt. Yay brohther

Unit 7 is not totally complete yet. If I'm off this weekend I will install the baffle plate and give it a test fire. If she passes then it will be ready for coating.
