    I think I read somewhere that baking in convection mode may result in lopsided bread or cakes.

    I'm with you on the glass tops.  We have an gas range and oven and my wife wishes the oven was a electric convection oven with a gas range.  I like cooking with gas on the range, but the convection seems to bake better and cooks more evenly.  @SGH, I do like the double oven though.  The dual fuel oven is going to cost more.  If its what she wants then I would make her happy and get it for her.  Happy wife, happy life.
