First overnight pork butt

8lb pork butt. Salt, pepper, dizzydust. Gonna try and hold 225 dome temp. Raised indirect. We'll see what the morning brings. Hoped to have nice pulled pork for the 1pm game. If not I'll order pizza.

Morning all. So far so good. Actually slept. Maverick woke me about an hour ago. Grill temp dropped to alarm threshold of 195. Fixed it. Currently running at 223 with internal meat temp at 153. Coming up on 11 hours. Haven't even peeked yet. Now thinking coffee....

15 hours. Internal temp 172. Won't be ready for start of ravens game but I'm in no rush. Did bump up the egg to 275.

Took longer than expected but worth it. First pic was sad. Everything ready but the pork. Bumped egg up to 350 to push it through. Pulled at 203 internal temp

Good stuff right here, if your dome read 225 is that also what your Maverick read? I have only done 6 Pork Butt cooks but for me I had my best success running 250/260 at the grid indirect at the felt.Charlotte, Michigan XL BGE

The maverick actually was reading less than dome....around 210 to 215 but I figured the cold pork was throwing it off some. I think next time I'd up the temp to what you have had good luck with. I'm above the felt line using the stock grate on the AR. -

Took 18.5 hours and that's with bumping it to 275 at the 15 hour mark and 325 for about the last hour. The next one I'd probably still do low and slow but up the temp from the beginning to about 260. At some point I'll give turbo a shot.
