Center Cut Pork Chops on the small

I have been traveling all week and finally had a chance to fire up the egg, went to publix and found some thick center cut chops, seasoned them with Fat Boys Rub, got the small BGE full if Rockwood and up to 325, put in the Woo with small stone and drip pan. Put the chops on and let it ride until the Internal Temp was 145 then wrapped them in foil and steamed some broccoli and served with applesauce. These chops were so tender and flavorful my wife and son at the chops and said they were the best yet, but they always say that.

  • Great looking chops. How long do you let them rest after wrapping in foil? And, what do they temp out at after they rest?

    I actually foiled them and stuck them in the oven at 200 while I waited for everyone to come to the table, maybe 15 minutes or so. They were at 150-153 when they got to the table. Super tender and juicy.
