Hopefully I don't run out of lump, I was a bit stingy with the OO cuz I didn't feel like opening a new bag.

@Phatchris‌ last weekend my OO ran out and I started to loose temp. Scrambled to get more in and re-lit. Had to jack temp up above 400 to help finish on time.

I feel the excess heat caused the PP to dry out. It was still better than 90% of restaurant PP, but I was disappointed in my lapse.

Murphy's Law - had folks coming over at 6:30 and was on pace to finish at six.

FWIW, if you can add more lump I'd do it prior instead of risking it at the finish line.

Looks great!  What sauce recipe or bought brand did you use.  

Jim's Own Sauce in Cary, NC have an Eastern NC vinegar sauce that I like.  Well, I like all their sauces actually.  Plus, made right here in good ol NC!
