Cooking up a pork loin, wings, and some boudin! Gonna fix a macaroni salad as well and likey something else to go with it. Got some brussel sprouts, maybe those.

Loin has a concoction of coffee, sugar, season salt, red pepper flakes, salt, pepper, brown sugar.
Wings, just a little salt and corn starch.
Boudin, guess will just throw on the grill. Never cooked it before.

Love boudin, I never cooked it either... Think I'd go with an aluminum pan with some liquid till 140IT then go direct to brown?

You will really enjoy the boudin. Once it surfaced up here (a road-trip from the Gulf...) I get some almost weekly. I go raised direct but I'm sure the boudin eggsperts will be along soon. Regardless, enjoy a great banquet.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

Ok fellas, here are the end results. Wings turned out nice and crispy. I dusted them with cornstarch and salt for flavor. Tossed in Franks wing sauce per my wifes direction.@SGH, @Dobie, @johnmitchell hopefully I didn't disappoint!Started with this....

Wings and boudin on top, pork loin on bottom with apple for smoke.
Looking good about half way through...

Brussel sprouts under the pork loin...

Pork loin is done! Took it to 140° and foiled.
Brussel sprouts are done...
Shesh... My knife cut sucked on that... Came out great. We didn't actually eat any of the loin, we decided to go with wings instead.
Wings plated with macaroni salad and brussel sprouts... Kinda weird, but it was good.

@SGH, the proof has been cleaned up already... I probably ate 5 wings, a entire boudin link, macaroni salad helping, and some brussel sprouts. I was stuffed!------------------------------

@DMW, when I cook a whole loin with much of a fat cap, I score it. I like that it renders into the meat instead of dripping down. I also get rub all in the scores as well.------------------------------
