Huh!  Couple more page turns in my new Sur la Table catalog, and I see a device that looks like a peppermill, that you place in a pot of pre-heated water; it both circulates and maintains the heat at a set temperature, making a sous vide system that I might be able to fit in my kitchen; it also stated that foods didn't need to be vacuum-sealed, a simple sealable freezer bag works fine.  
I need to hide my computer if I have any more wine, tonight.
