Dueling Pork Butts
Happy Labor Day!
Yesterday, for the first time I smoked two Pork Butts on my XL BGE. They were roughly 9lb each.
I first cleaned out my XL and stuffed it full of lump and cherry chunks
I prepped the two butts by applying a coat of yellow mustard then adding a liberal about of rub.
I fired up the egg and got it ready for an over night cook.
I put the two butts on at 2300 Saturday night. I figured it would take about 15-16 hours. But I was wrong, it only took about 13 hours.
I took them off the egg and FTC them.
Emma thought it smelled pretty good!
I FTC it for 5 hours before shredding the meat. The foil was still hot to the touch.

They were awesome @johnkitchens. I was a little disappointed in the bark, it was a little soft. I'm thinking it was because I had to FTC so long?Cooking on a XL BGE from Allendale, Mi.

Yes, bark will soften during a FTC.Southeast Florida - LBGE
In cooking, often we implement steps for which we have no explanations other than ‘that’s what everybody else does’ or ‘that’s what I have been told.’ Dare to think for yourself. -
