Babybacks finished well, plus clamcakes and sisters bread pudding.

Did these babyback racks today,removed membrane, rubbed with yellow mustard and Paul Prudhommes Pork Magic and salt

Put on vertical rack at 250F

Spritzed with apple cider every hour

cooked for 3 and 3/4 hrs until thermopen slid in effortlessly and read 197F at thickest sections. Everyone raved about the flavor and easy bite through.

used apple chunks for smoke (7) pcs

My Bro-in- law made an east coast specialty "clamcakes" pictured also. Deep fried deliciousness, with two heat levels of dipping sauce.

Served with veggie salad.

My sister's homemade bread pudding for dessert.

Great time with family.

    Brother that's my kind of meal right there. Ribs and deep fried clam cakes. It all looks mouth watering to say the least. Excellent cook all around. I'm both honored and obligated to give this the SGH seal of approval my friend. =D>
