Nice Mahi filets on sale here yesterday so I picked up a 2 lb'er and cooked it hot and fast with a some sweet and smokey seafood rub. 500 dome, couple of minutes flesh down and then flipped for a couple of minutes. I don't usually temp fish, so no idea what the IT was when I pulled it. Very moist, served with mango/pineapple salsa and fresh sweet corn with lime/jalapeño butter.
