How much time for a 12 LB Choice Brisket at 250 dome?

Any advice on how long I should allow to cook a 12 pounder? A few weeks ago it took 13 hrs for an 8.2 lb brisket.

    The same advice you received when you asked this question your last brisket cook still remains true.

    You're looking at about 1.5 hours per # at that temp. A brisket is just like a woman. Sometimes they're done fast and sometimes they take forever. You'll never understand them but you'll keep coming back for more.

    Thanks for the advice.My wife takes 1.5 hrs just to get ready in the morning.:-) Once I get thru a few more briskets I will be less nervous.

    Don't be nervous my friend. Just sit back and enjoy the ride. When folks get nervous that's when they make mistakes. Just let it sail along. You will do just fine.
