Ask and Ye Shall Receive

I've been having a hankering for pheasant. And being a Nebraskan living in FL for over 20 some odd years I haven't hunted them in a very long time. I resorted to buying them from a local butcher. My birds came in today that I ordered about 2 wks ago. 2 whole birds each at about 3# each (when I saw them I said seriously?). They looked much smaller than the ones I would bring home back in the day. Obviously these are farm raised. They ran $8.16 a # and it hurt me to have to buy them VS hunt them. But, since I'm no longer in pheasant country I'll take what I can get. I'm researching some very old family recipes and plan on incorporating them for the egg. This will most definitely be a Husker Game Day cook when I do it.
