Skirt steak ideas

I thawed two skirt steaks today for dinner tomorrow. I'm looking for any ideas as too home made marinade and cooking ideas. Thanks

Fajitas are the "gold standard" for skirt steak. Simple salt, pepper, squeeze of lime or do a carne asada marinade.Even just salt. High heat sear to medium rare. DOn't go much past that.

EEVO - light coat, Lime juice - fresh squeezed, one lime per steak. Rub of choice - optional.Fridge for as much time as you have.New Albany, Ohio

EVOO, Cilantro, Chipotles in Adobo sauce, choped garlic, salt, Cumin, Ancho chile pepper, lime juice and zest. Put the skirts and ingredients in a large Ziplock, gently squeeze out the air, close it up and massage through the bag. Marinate in fridge for 4-5 hours. Take it out just before you are abt to fire up the Egg.
Crank the Egg up to about 800 and cook direct, abt 4 - 5 minutes on each side. Cover in foil and let it rest for 15 minutes before slicing against the grain.
While the Skirt is resting, throw a couple of peppers (Red & Green, maybe 2 of each depending on how much Skirt you have) and an onion or 2 (peeled and halved) on the grill after drizzling all in EVOO and a little salt.
Once the veggies are cooked completely, let them cool and then slice them up.
Make some Guac.
Tortillas come in handy. -
I do O.J., lime, cilantro, garlic, evoo and jalapeno . Marinate for about 12 hours. Serve with grilled corn tortillas , salsa verde and avocado.

I marinate in some beer and chipotles for a couple of hours. Then I put some DP Fajitaish rub. Simple fajitas but so good.1 large BGE, Spartanburg SC

I marinate in a little bourbon, Worcestershire sauce, salt and pepper. Not really for fajitas but delicious.LBGENorth Jersey

I did flank last Saturday. Heated canola oil up and added two cloves of garlic to infuse the oil with first. Added salt, pepper, fajita seasoning, and Adobo seasoning to make like a paste. Then hit that with juice of one lemon. Awesome flavor!------------------------------

@StayClassy Bourbon and soy sauce with a few crushed garlic cloves is a killer marinade for strips and filets. Warm it up and dunk the steaks in for abt 20 minutes before throwing them on the Egg.

I do a simple marinade and usually do fajitas with skirt steaks.
Soy Sauce, Pineapple Juice, garlic, onion and a little cumin and fresh black pepper.
Cook it caveman on the coals. Count to 90 seconds, flip. 90 seconds, and put it in foil, squeeze a lime on it, and close it up.
Slice against the grain, and enjoy it.. Out of this world.

Richmond and Mathews County, VA. Large BGE, Weber gas, little Weber charcoal. Vintage ManGrates. Little reddish portable kamado that shall remain nameless here. Very Extremely Stable Genius.
