Hatch Chile Cheese burger

I had this afternoon off so I roasted some of the chile peppers I bought yesterday and made some burger buns, burgers and spiralized potatoes. Simple but tasty.

I just roasted another batch of Hatch after a wild salmon cook on the medium.  I need to pick up more.  Used the food saver to package and freeze the first batch.  Maybe tomorrow night or Sunday I can actually build something using them.  Sadly, I need to work tomorrow.

FWIWi kind of miss our old rivalries ie OU, all of TX, KS, CU etc. But the BIG was a smart move IMHO. Also it looks like in a few years we'll have OU as a non-conf game.
