How can I tell if my ribs are from the shoulder or the loin? And how do I cook them, I have been searching the archives on this site for hours and have learned some, but I still have these questions.

Most likely they are from the shoulder, I do them turbo style. 350 indirect with which ever smoke you prefer, they usually take around 70 minutes.
