ABT'S stuffed with shrimp

ABT's stuffed cream cheese and Monterey Jack. Placed a shrimp on each and sprinkled with Old Bay. Wrapped that in bacon and sprinkled with some rub. Taste pretty dang good.

@tarheelmatt. Yeah that's me all over. I've got some jalapeños almost ready to pick.I wonder if you chopped the shrimp up and mixed it in with the cream cheese and jack, whether that would work too. I'll give it a whirl and see.

I just laid a whole shrimp across. At first I thought about placing the shrimp, cream cheese, and Jack in the food processor, but decided to go whole. I have some better pictures on my camera that I took as well showing the process.------------------------------

I tried the cut just below the head and core out, it was just to difficult. Got pissed and just cut lengthwise. Had one out of the bunch like that.
This was a solid cook and would not really change anything. When you get that bite with everything, it is simply amazing.

Excellent. looks like you nailed it. I've never been able to get shrimp to not overcook in ABTs, by the time the bacon is cooked, the shrimp seems to be "vulcanized", way too rubbery. End up chopping the shrimp and mixing with the cream cheese, would prefer to have what you did. Did you do anything special to the shrimp?Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad!

I've been doing shrimp in them for years. I use shredded gruyere mixed in the cream cheese.

@Skiddymarker Nothing real special. The cream cheese was softened and I placed the jack in the cream cheese to mix. Spread the that mixture in the pepper, laid the whole shrimp on the mixture, sprinkled the shrimp with Old Bay, then wrapped with bacon. Sprinkled the bacon with Jim's Own Smokey rub.
I just warmed up some here at work. The office smells like smoked, cooked bacon. Gave some to my taste testers here. One guy said the only problem I see is you didn't bring more.
Cooked 400° for about 30 minutes.
