    It's on the offset. It's about where I want it. Just some final adjustments. I thought since The Cen-Tex Smoker requested it I would cook it in true Texas form on the Jambo offset over oak. Thanks for the kind words my friend.

    I gave it a 6 hour smoke at 150 degrees before the walk up to cook temp.

    @SGH I use those hooks to hang pork belly for bacon in the upright with the a-maz-n-smoker.
    BTW, that clucker doesn't look like a 'basket' case. Nice.

    @SGH. No, just the bacon. I couldn't stack bellies in my converted upright smoker so I hang 4 of them from the top rack. Works like a charm.
    You probably use 'em in that large offset for ribs and roasts.
