Just recently moved to the Austin area. Big thanks to @The Cen-Tex Smoker for answering some questions and relaying area info.
Just cooked my first Texas brisket. Also my first prime brisket. Not as good as a SRF one but excellent overall. S&p, oak, 250 for about 22 hours.

Home-run right there. And away the prime brisket prices go again...see where it's $4.19/lb now. Just $3.99/lb two weeks ago (and $2.99/lb in Feb). Surprised that it took so long as I find that prime cooks faster than the choice or CAB of equivalent weights. Of course, all cook to their own beat but I generally plan for no more than 1.5hrs/lb at around 260-270*F on the dome and they finish inside that window. Regardless, most eggcellent. Enjoy the eats.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.
