A better look at my first brisket cook...

First, I want to thank those that chimed in and helped me through the cook. Much appreciated guys. That is what makes this forum so wonderful.

My guests (that I finally found to replace the original guests) loved the cook.
Here is the Large chugging along looking like a steam engine. This is a 15 second exposure with all lights off. Taken at 2am in the morning.

Wow...that looks great. My mouth is watering for beef, have only had pork for the past few days and salmon is on the menu for tonight.We needed something today and Walmart was the most convenient. Turns out they had choice packers for $2.98/lb. Somehow a 14 pounder jumped into our cart.They/Them

@lousubcap, I really liked it. I gorged myself a so did my buddy. However, I still like pork better. Shoulder first, butt second, then brisket. I like something different at times and this fit the bill.------------------------------

Here you go...1 - Bake potatoes (2 per person)2 - Make ranch dressing (1 cup mayo, 1 cup buttermilk, pakage of ranch seasoning). Chill overnight.3 - 12 oz of bacon fried (still limp) and chunk.4 - Pour half of the dressing in baking dish.5 - Chunk potatoes and lay over dressing.6 - Place bacon over potatoes ( I use bacon grease too)7 - Take cheddar cheese and monterey jack over top. Roughly 2-3 cups.8 - Place under broiler until cheese is melted.9 - Sprinkle with chives.10 - Serve with more ranch on side.------------------------------

Guy's, I am not sure if this is kosher or not, but this is what I had for lunch.
Leftover brisket sandwich (w/mayo(Dukes) (I am southern you know)) with about three slices of homegrown German Johnson tomato on it! Dang it was good.
