@Mattman3969 MaMa's chicken ended up being 4 chicken breast cutlets marinated in a real lite teriyaki marinade. Cooked at 375℉ in foil packet. Pulled when tender and juicy at about 155℉ which allowed for some carry over cooking and didn't dry it out. Unfortunately I got hammered with our 2nd wave of storms and didn't get any shots before it went into the refrigerator (she's eating this tomorrow and on Tuesday). @mcmac thanks man. Ya the cook went down without a hitch and comfortably made my self imposed deadline so Our Son was able to eat w/ us along w/ his GF before he headed off to work. Sounds like a great close to the weekend. Nice looking ribs too. Baby backs usually get the nod here over spares for some reason. I'll have to try the basic salt and pepper rub. I usually do Meathead's Memphis Dust on ribs.L x2, M, S, Mini and a Blackstone 36. She says I have enough now....eggAddict from MN!

The S&P prep was the same as the Mickey's for me on this one. Pulled the membranes, rinsed them w/ cool water and patted dry, no mustard etc, applied S&P on 3 & Mickey's on the other 3. Got egg stabilized and put those bad boys in. I ended up rolling at 275℉ which was good :-) @danv23 Then rotated top to bottom/ bottom to top about mid way in the cook. These went about 5-5.5 hrs. Uncovered. I'll be trying this with some spares in the future. The S&P was my favorite.
