My First Brisket!
Made my first brisket yesterday, the taste was amazing. Served it up with the burnt ends, home made bbq sauce, stuffed zuc, flowers with bocconcini and fresh basil, sauteed garlic spears and mushrooms, bean salad and nann bread. Desert was chocolate hazelnut espresso bark. What a feast, I was pretty nervous doing the brisket, it was expensive and sure didn't want to screw it up, think I got 4 hours of sleep. Did it fat cap up, next time will try fat cap down used a simple kosher salt and black pepper rub, wanted to taste the meat as it was a CAB full packer 13 #.

@Brisket_Fanatic Melt white chocolate 375g, melt dark chocolate 375g, add espresso powder 2 tsp.to dark choc. Add 1 1/2 cups of whole hazel nuts to the white choc. Line pan with parchment paper, mark off 5 lines. On line 2 and line 4 place a line of white choc. On line 1, 3 and 5 place lines of dark choc. Run a knife thru to create the design. Cool in the frig till solid. I'm not to good with instructions and have lost the recipe, hope you can understand my rambling. By the way this is sinfully good B-)Ottawa Valley, Ontario
