I went for pork butt. I left with prime brisket. It made more cents.

I fell for it too. Stopped by HEB after work to pick up some beer, and decided to cruise by the meat section. Select packers on sale for $2.90/lb or something like that. There were 3 prime packers hiding in there, unadvertised, $4/lb. The floppiest one jumped into my cart somehow and I ran before it changed its mind. Flats (grade unmarked) were $5/lb!

Costco has cheaper prime briskets, but the trip takes time. HEB is 5mins away.

Geez I wish I had that problem with low beef prices! Going on a road trip soon and hoping to stop at pasture prime farms in Florida to buy some grass fed brisket and maybe some berkshire pork.

You had me worried for a minute when I read the title. Thought you may be giving up cooking. Glad I was mistaken my friend. Would not be the same here without you brother. You are certainly one of the good ones.

Small problem. I recently moved and have only cooked fer jitas. I can't find a single thermo. Not a dome, not a maverick, not a party q.

Looks like I'll be cooking $120 worth of prime brisket with the force tonight.

Brother not to worry. I'm sure you can do it with your eyes closed. It will be excellent my friend. I don't bother with the internal temp when I cook them over water. Never have. As far as temp on the cooker you can guesstimate it within reason by feel. Won't be a issue at all my friend.

Costco had choice brisket for 5.99 lb today, and butts at about 2.50.

I went to a restaurant supply store (cash & carry) and they had the same choice brisket for 3.50 lb and butts for 2.25 I believe. I picked up a couple of butts and will be starting the brisket tonight at about midnight.

I couldn't believe how much Costco wanted for a choice brisket.

Travis, I put a couple butts on tonight and I've been using zen to figure out I have a bad probe.  But I do have a dome that's recently calibrated.  I was just thinking, I don't need no effin temp control.  Except an instant read.

Both briskets are good. I just pulled the smaller one off. I have no clue what temp I was cooking at but it worked.

Nope. Home made rub with oak chunks. Low and slow with no foiling.

I say we call this the "non-Travis Travis method" from now on.
