Spatchcock on the Small

Simple cook, but I'm finally back on topic. So nice to be back with my eggs.

Have a potluck tonight for my son's baseball team tonight.

Since there have been many games where I have brought either chicken pieces or a whole spatchcock for our family during games (warmup starts at 5PM, games at 6) this season I figured it would be appropriate if my contribution tonight would be a chicken.

Used "Traditional Turkey" rub from Tasty Licks BBQ:


The breast meat is at 138* currently according to the Maverick. Once it hits 150* I'll confirm temps with Thermapen, pack it up and head over.

    Just came off. Skin is nice and crispy. It will have about an hour to rest covered in foil in a cooler, so I know I will lose some of that.

    @FATC1TY‌ This was almost a 7lb bird, was plenty of room for a bit larger.

    Looks great @DMW! I love you view from your deck. I rigged up a way to do a raised grid on my SBGE yesterday for exactly that purpose but haven't had the chance to use it yet. Nice to know you can fit a good sized bird on there.

    @NPHuskerFL It is a corn field. And directly behind that is a grass strip airport that does glider rides almost every weekend. The view out the back was one of the big selling points when we were house hunting.

    @DMW - Is that a Martin house in the pic?  Do you get a lot of Martins where you live?

    @mlamb01 - That's in my neighbor's backyard. I wouldn't know a Martin if I saw it, don't know much about birds myself.

    This is like deja vu. When I was a kid in Nebraska my grandparents had a Martin birdhouse specifically for Martins that would migrate through Nebraska. It had 150 bird occupancy and in winched up the pole and of course lowered so we could clean it out at the end of the year. They enjoyed watching them but, the mean ole Blue Jays would some times try to take occupancy So like any landlord we'd evict them ;-). Great memories.
