Bourbon barrel char smoked salmon

I recently got a bag of barrel char while judging a BBQ contest in Bardstown, KY. Decided to cook salmon tonight and seem like a perfect fit for it. Tonight was also the first cook on my new gasket. I have had the thing for over a year and just finally got it installed. I spread a layer of the char in an aluminum pan. Once the Egg got up to temp I put the pan in and waited for it start smoking. I cooked the salmon indirect for around 15 minutes at 375 degrees. Probably should have given it closer to 20 but it was still good. It had a nice smoke flavor but wasn't over powering. Look forward to trying it again soon.

    I've done non-charred barrel chips and liked them but I haven't tried these charred ones.  Thanks for the tip, I'll have to give them a shot.
