Crappie Fish Fry!
In-laws came up for the older childs birthday party and brought up a mess of Crappie. Fired up the large to cook up the potatos and the small for the fried fish. We used a mixture of butter and canola oil in a cast iron skillet and the egg was running around 400 degrees as its hard to regulate when the lid is open. Fish was dipped in melted butter, rolled in saltines, dusted with salt and pepper and tossed in the skillet. This stuff is so good we didn't even sit down to eat, just kept snarffing it off the table once it cooled slightly. Both kids loved it and thought they were chicken strips.
Kids even got the smokey joe out and pretended to cook up noodles as they snacked on the crappie
On a slightly healthier side I wanted to try a couple filets on a cedar board with some galic pepper and lemon pepper.

Pretty hard to beat, although the cedar plank was a nice difference. I also love to cook the filets in a foil packet with onion, butter and garlic.

Mmmmm, My husband always said crappies weren't any good to eat! When our pasture fields flood and then the water goes down, we've got crappies stranded all over the place, maybe next time I'll go "fish" one out!

I like Crappies!!!! a lot! Lake Okeechobee FL winter 2013 oh yea. I need to try them with butter and saltines though. If the kids like it you know it's good eats.

We call speckled trout "specs" here in LA. It's what you seem to catch the most of in the Mississippi delta area around NOLA in salt and brackish water. Also red fish. The catfish we just throw back.

Depends. Pan-sized channels are keepers for sure. The carp and dogfish get tossed up on the bank.
