Pork butt help now

I have two 8 pound pork butts. I put them on at 8:30 tonight. Dome is at 275 and grate at 228. Two hours on and the butts are already at 97. Is this cooking too fast? Bone in and the thermometer is not near the bone.

    If you want them to dwell that long I would recommend dropping the temp a few degrees. It's always easier to raise the temp toward the end of the cook if needed to speed them along. I cook 8&9 pound butts on a regular basis at a perfect 225 degrees and the cook time is more often than not between 14 and 15 hours dwell time. The higher the temp the more this dwell time will be reduced. I hope this helps my friend and good luck.

    Everyone does things different but I never concern myself with dome temp unless I'm encroaching high into the dome . 95 percent of the time I use grid temp and don't even concern myself with what the dome temp is. Again the exception to this rule is if I'm encroaching high into the dome then I do monitor it for obvious reasons . Good luck my friend .
