Spatchcock Chicken and Grilled Pineapple
What the heck could be healthier? Forgot to mention the brussels sprouts. Still experimenting on the spatch - this time left the skin on, but seasoned under the skin. Swamp Venom, it was. 400 degrees for 45 minutes finished the thighs, raised direct on the top deck of the XL AR. Another 5 minutes for the breast to be at 165. Unfortunately, spatchcock is so reliably good, it's hard to brag that "I nailed it". It was excellent - very moist, and even the breast was good (I mostly like the thighs and legs). But the GFU (a white meat kind of a girl) loved it - Happy wife, happy life. Well maybe someday.
Anyhow pineapples were cheap at the market today, so after dinner I did the grilled pineapple marinated in dark rum and seasoned with Pineapple Head. A perfect way to top a great meal.

Looks grand! Not having cooked pineapple before, can you eat the core if it's grilled? I've carved my share and eaten them fresh, but always cut out the core.

The core isn't real edible - I eat around it. I don't use anything fancy for trimming, just a cleaver. I've seen corer/peelers, but they look like they'd be wasteful on the peeling side. Grilled pineapple is a treat!!!Santa Paula, CA

Nice, will be doing some this week. Favourite treatment for pineapple is dredge in 50/50 mix of sugar and cinnamon after dipping the cored slices in coconut cream (sticks better to the pineapple than milk).Grill it 'till the sugar caramelizes.Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad!

@Skiddymarker - that sounds great. I use 12 oz dark rum and a half cup of golden brown sugar - marinate for 30 minutes or so. It's so good. GFU is on a diet, and passes on the marinade - not enough will power to pass on the pineapple head though.Santa Paula, CA

Nice. I soak in coconut milk, brown sugar and cinnamon. Would do rum if there was any in the house.
